Jerk Mahi: Pawpaw and sweet potato salad with arugula, red onion, roasted peanut,  lime ginger vinaigrette, pineapple jalapeno Margarita.

  •   Jerk Marinade:

1-2 Habanero Pepper

1 T Fresh Thyme

3 each washed green onions

1 inch piece of peeled ginger (2oz)

3 T Coconut Palm Sugar

2 t salt

1 T amino acids

3 t ground allspice

2 t ground black pepper

1 shallot peeled

¼ cup grape seed oil

2 t apple cider vinegar

- blend all ingredients in blender or food processor

1.5-2 lbs Mahi Mahi portioned 6-8oz and marinated for 1 hour. Then Grilled.

1 medium papaya, peeled, seeded,  cut into batonnet cut.

3-4 medium sweet potato baked slightly under enough to peel and batonnet cut.

1 each small red onion julienne cut.

1 C raw peanuts, tossed in 2 t honey, 1 t salt, pinch cayenne. Roasted in oven 5-10 min @ 350’.

2-3 oz fresh washed and dried arugula.

  • Lime Ginger Vinaigrette:

2 each limes segmented

2 t Dijon mustard

1 oz peeled ginger

2 T apple cider vinegar

2/3 C grape seed oil

2 t honey

-blend limes, Dijon, ginger, vinegar, honey

-while slowly blending drizzle in oil

-thin with teaspoon or two of water if needed

  • Pineapple Jalapeno Margarita:

1 pint Tequila

6 oz lime juice

1.5 sliced pineapple

2 oz Jalapeno simple syrup

(1 each small Jalapeno 1C cane sugar 1C water, boiled, strained and cooled)

Blend all ingredients in blender and serve on the rocks with salt/sugared rim.
